Our cheese making process starts with milk, purchased from Fawn View Manor. Several thousand pounds of milk is picked up by a refrigerated truck and taken to a small family owned cheese processor. There, the milk is divided. Half goes to making a cheddar base and the remainder goes to making the Colby base. The process for each base flavor is slightly different. For both, the first step is to separate the curds and whey. The whey is drained and then batches are broken out depending on what flavors are being made. After seasonings are added to the curds they are put in the hoop box and compressed to make a 40 pound block of cheese which will then age 60 days and then finally cut into the smaller blocks. The cheeses are wrapped in plastic and the labels are added. Then, they’re ready for you to take home and enjoy!
